Ingredients
- 1 tablespoon olive oil
- ¾ cup Paleo-friendly BBQ sauce (unsweetened or naturally sweetened with dates)
- 3 tablespoons raw honey, melted
- 2 tablespoons coconut aminos
- 1 tablespoon stone-ground mustard
- 2 teaspoons minced garlic
- ¾ teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- 1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large yellow onion, cut into 1-inch pieces
- Wooden or metal skewers
- Chopped fresh parsley or cilantro, for garnish (optional)
Instructions
- In a large bowl, whisk together the olive oil, BBQ sauce, honey, coconut aminos, mustard, garlic, salt, and pepper until well combined.
- Reserve ½ cup of the sauce in a covered container and refrigerate. This will be used for basting and serving. The remaining sauce will be your marinade.
- Add the chicken to the marinade and toss until evenly coated. Cover and refrigerate for at least 2 hours, or overnight for even more flavor.
- If using wooden skewers, soak them in water for at least 10 minutes before grilling.
- Preheat the grill to medium-high heat. Thread the chicken onto skewers, alternating with the bell pepper and onion. Leave a small amount of space between each piece to help everything cook evenly.
- Grill the skewers for about 10 minutes, turning every 2–3 minutes until all sides are lightly charred and the chicken is nearly cooked through.
- During the last few minutes of grilling, brush the skewers generously with the reserved BBQ sauce. Continue cooking until the chicken reaches an internal temperature of 165°F.
- Transfer the skewers to a serving platter and garnish with fresh herbs, if desired. Serve with any remaining reserved sauce for dipping.
