Honey BBQ Chicken Skewers

These Honey BBQ Chicken Skewers are sweet, smoky, and packed with flavor using simple, clean ingredients. They're Paleo-friendly, naturally sweetened with honey, and perfect for backyard cookouts, weeknight dinners, or meal prep. Ingredients

  • 1 tablespoon olive oil
  • ¾ cup Paleo-friendly BBQ sauce (unsweetened or naturally sweetened with dates)
  • 3 tablespoons raw honey, melted
  • 2 tablespoons coconut aminos
  • 1 tablespoon stone-ground mustard
  • 2 teaspoons minced garlic
  • ¾ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow onion, cut into 1-inch pieces
  • Wooden or metal skewers
  • Chopped fresh parsley or cilantro, for garnish (optional)

Instructions

  1. In a large bowl, whisk together the olive oil, BBQ sauce, honey, coconut aminos, mustard, garlic, salt, and pepper until well combined.
  2. Reserve ½ cup of the sauce in a covered container and refrigerate. This will be used for basting and serving. The remaining sauce will be your marinade.
  3. Add the chicken to the marinade and toss until evenly coated. Cover and refrigerate for at least 2 hours, or overnight for even more flavor.
  4. If using wooden skewers, soak them in water for at least 10 minutes before grilling.
  5. Preheat the grill to medium-high heat. Thread the chicken onto skewers, alternating with the bell pepper and onion. Leave a small amount of space between each piece to help everything cook evenly.
  6. Grill the skewers for about 10 minutes, turning every 2–3 minutes until all sides are lightly charred and the chicken is nearly cooked through.
  7. During the last few minutes of grilling, brush the skewers generously with the reserved BBQ sauce. Continue cooking until the chicken reaches an internal temperature of 165°F.
  8. Transfer the skewers to a serving platter and garnish with fresh herbs, if desired. Serve with any remaining reserved sauce for dipping.
