Serves: 6
Prep Time: 10 minutes
Cook Time: 30–35 minutes
Total Time: 40–45 minutes
Ingredients:
Sheet Pan:
- 1 package chicken apple sausage, sliced into 1-inch rounds
- 1 package sugar-free bacon, cut into 1-inch pieces
- 1 lb Brussels sprouts, trimmed and halved
- 1 lb butternut squash, peeled and cubed
- 1 Honeycrisp apple, peeled, cored, and diced
Dijon Marinade:
- ¼ cup olive oil
- ¼ cup coconut aminos
- 1 tablespoon Dijon mustard
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon sea salt
Garlic Aioli — Optional
- ¼ cup mayonnaise
- 1 garlic clove, finely minced
- 2 teaspoons hot sauce
Instructions:
- Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper.
- Start the bacon. Spread the bacon pieces evenly over the prepared baking sheet and bake for 8 minutes.
- Prep the sheet pan mixture. While the bacon cooks, add the chicken sausage, Brussels sprouts, butternut squash, and apple to a large bowl.
- Make the marinade. Whisk together the olive oil, coconut aminos, Dijon mustard, onion powder, garlic powder, paprika, and sea salt. Pour over the sausage and vegetables and toss until everything is well coated.
- Combine and roast. Remove the bacon from the oven. Add the sausage and vegetable mixture to the baking sheet and toss everything together with the bacon and rendered bacon fat. Spread into an even layer.
- Roast for 20 minutes, then give everything a good toss. If you'd like more browning and crispy edges, return the pan to the oven for another 5 minutes.
- Make the aioli. While the sheet pan finishes roasting, stir together the mayonnaise, garlic, and hot sauce.
- Serve warm, drizzled with garlic aioli or with the aioli on the side.
Notes:
Sweet potato swap: Sweet potatoes work beautifully in place of the butternut squash. Because they take a little longer to soften, add them to the sheet pan at the beginning with the bacon so they get about 30 minutes of total roasting time.
For extra browning: Give the ingredients plenty of room on the baking sheet. If everything is crowded together, divide the mixture between two pans so it roasts instead of steams.
Whole30: Check the labels on your sausage, bacon, Dijon mustard, hot sauce, and mayonnaise to make sure each is Whole30 compatible.
