Ingredients
- 1 tbsp olive oil
- 3/4 cup BBQ sauce (unsweetened or date-sweetened)
- 3 tbsp raw honey, melted
- 2 tbsp coconut aminos
- 1 tbsp stone-ground mustard
- 2 tsp minced garlic
- 3/4 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1 ½ lb boneless, skinless chicken breasts, cut into ~1″ cubes
- 1 large red bell pepper, cut into 1″ chunks
- 1 yellow onion, cut into 1″ squares
- Wooden or metal skewers
- Fresh chopped herbs (for garnish, optional
Instructions
- Make the sauce/marinade:
Whisk together the oil, BBQ sauce, honey, coconut aminos, mustard, garlic, salt, and pepper in a large bowl. Reserve about ½ cup of this mixture in a small covered container and refrigerate—this will be your basting sauce. - Marinate the chicken:
Add the chicken pieces to the bowl, tossing them to coat thoroughly. Cover and chill for at least 2 hours (or overnight for an even deeper flavor). - Prep skewers:
- If using wooden skewers, soak them in water for ~10 minutes to prevent burning
- Preheat your grill to medium-high
- Thread the chicken, bell pepper, and onion onto skewers, alternating pieces. Leave small gaps to ensure even cooking
- Grill:
- Place skewers on the preheated grill
- Cook about 10 minutes total, turning 4 times so each side gets grilled
- Once the chicken starts searing, brush generously with the reserved sauce
- Serve:
Remove skewers when the chicken is cooked through (internal temp should reach 165 °F). Transfer to a platter, add extra sauce and sprinkle with fresh herbs, if desired. Serve hot!
